Another fabulous single barrel rum selection from Dutch independent bottlers Ultimatum.
This time round it’s a rum from Trinidad Distillers Limited, a company that forms part of the Angostura group. A huge operation, this distillery produces around 20 million litres a year, much of which is exported around the globe to bottlers such as Ultimatum. Trinidad Distillers Limited largely produce their spirit from molasses from Panama, Guayana and the Dominican Republic. This spirit is produced in the famous, humongous 7 column still which towers above the other distillery buildings.
Ultimatum have picked out an absolute beauty of a rum, a 25 year old single barrel which has been matured in a former Bourbon cask, number 2487. First distilled in December 1991 and bottled on the 28th of July 2017, this rum has attained a tremendous age.
In a move that will no doubt delight rum fans across the globe, Ultimatum have provided a label low on marketing fluff and high on detail. The label states that this is a rum produced in the “English style”, which does not mean that any of it was produced in England, rather that it follows the former British Colonial style of spirit, usually darker and heavier.
Moreover, it states that this spirit contains no additional sugar or colouration, and has not undergone chill filtration, meaning that all the delicious flavours of this rum are presently naturally. This is something of a rarity in the rum world.
Drinkers should expect a heady, thickly flavoured and heavy spirit, with plenty of dark molasses notes, tropical fruit, slight esters and cake-like yeasty notes. After 25 years of maturation, this rum provides tonnes of complexity and flavour.
Being a single barrel rum, supply of bottles is highly limited with just 322 available for purchase worldwide. This means that drinkers should purchase quickly to avoid missing out!
