Another top quality release from the excellent West Cork Distillers. First founded in 2003, West Cork have quickly built a reputation for producing some of the very best Irish whiskey on the market. This is one such example, a delicious Single Malt pot still Irish whiskey, aged for 10 years in former first fill Bourbon barrels with a heavy char, imparting a delicious smoky sweetness. On the nose this whisky is intensely malty, with aromas of freshly baked bread, honeyed cereal, toffee, milk chocolate, baking spices and a wisp of barrel char. The palate is rich and chewy, with lovely malty flavours, and the addition of a few faint floral notes of heather honey, alongside a little burnt oak. The finish is long and lasting, with a buttery sweetness and smoky spice. Do not be alarmed if this whiskey goes a little hazy in the bottle in cold weather, this is because despite being only 40% ABV, it is non chill filtered, meaning all the flavour is in the bottle. This whiskey won a platinum medal in the 2015 Sip Awards, whilst the Los Angeles International Spirits Competition gave it a gold medal.
