West Cork is one of Ireland’s newer whisky companies, but they have already built a good reputation for quality. This is another excellent whiskey from them, a single malt finished in Sherry casks after a maturation in American oak former bourbon barrels. This gives the whiskey a wonderful well rounded profile and delicious complexity. On the nose this whisky has wonderful aromas of sweet berries, pastry, dark chocolate and vanilla custard. The palate is rich with creamy, sherried, dried fruit, almonds, hazelnuts, sugar and a bit of espresso. The finish is thick with juice and woodspice which last and last. A truly delicious Irish single malt bottled at 43% ABV, giving it a wonderful warmth.
