West Cork is one of Ireland’s newer whiskey companies, but has been behind a string of recent releases. These have included a range of wonderful cask finishes, such as this excellent Port cask dram. Irish whisky is not often Port finished, so this is something of rarity. This whiskey has been aged in former Bourbon barrels initially, being moved into the Port cask for a short finishing period. This has given the whiskey a faint rosy hue and an extra layer of sweetness. On the nose this whiskey is fruity and fudgy, with some slight herbal notes, toasted barley and vanilla soaked oak. The palate brings notes of tea cake with some butter and honey, a little espresso and dark chocolate, before a faint wave of red fruit flavours. The finish is creamy, with red berries, woodspice and toffee lasting. A delicious Irish single malt, bottled at the slightly higher 43% ABV.
