An installation in GlenAllachie’s Wine Cask Series, which shows off the Speyside distillery’s spirit with different varieties of wine influence.
Ordinarily, bottlings in this series are aged first in American oak Bourbon barrels before being transferred into European wine barriques.
For this bottling, GlenAllachie’s Master Blender Billy Walker has done something a little different, blending together spirit that has been finished in four different kinds of red wine casks: Languedoc and Médoc from France, and Grattamacco and Recioto della Valpolicella from Italy.
The final result is a wonderfully complex and delicious dram, offering notes of apples, pears, sweet grapes, ginger, malty biscuits, ginger, allspice, toffee, plums, figs, cherries, orange rind, floral honey, yellow nectarines, redcurrants and toasted oak.
Bottled at 48% for a touch more body, this is another masterpiece from Billy Walker.
