Another delicious offering from Signatory’s esteemed Un-Chillfiltered range. This time round they’ve picked out a cracking single cask, 2009 vintage Edradour.
Whilst Signatory has not revealed the cask variety for this dram, you can be pretty certain that this whisky was aged in a former Sherry Cask – and an active one at that, look at the darkness on show here!
The spirit was distilled on the 11th of December 2009, and bottled on the 20th of February 2020, having been aged for over ten years.
The final result is a gloriously spicy and fruity dram, which serves up notes of rich sherry, dried fruits, slight herbs, aniseed, caramelised fruit pastries, dark oak, toffee’d malt, candied orange rind, juicy red berries and dark chocolate.
As the name suggests, this whisky has been bottled free from chill filtration, and at a strength of 46% ABV. No artificial colouration has been used either.
A belter of a dram, that will prove to be very popular indeed.
