A vividly flavoured and designed rum from the Plantation company (which is in the process of changing its name).
As ever with Plantation, there is a wealth of information for the true rum aficionado. This rum is made with a base of molasses, which were fermented for between four and five days. The spirit was distilled in triple column stills in 2005 and aged for 14 years in 200 litre former Bourbon barrels in Fiji, before a one year finishing period in French oak barrels at Maison Ferrand, in Cognac.
The spirit possesses 226.4 grams of volatile substances per hectolitre of pure alcohol, and 99.1 grams of ester. This rum was dosed with 4 grams of sugar per litre.
The final result is a powerful, fruity rum, underpinned by a spicy profile, with notes of fresh ginger, plums, prunes, cinnamon, vanilla, some sultanas, nutmeg, pears, liquorice, allspice, chocolate, toasted nuts, overripe bananas, fudge, toasty oak and slightly funky molasses.
Bottled at a robust 50.2% ABV, this is a fully flavoured, fully textured spirit.
