A terrific single cask rum from Plantation (now known as Planteray Rum).
This rum was distilled at the Bajan West Indies Rum Distillery, from a raw base of molasses. The molasses were fermented for two or three days, before being distilled in a combination of pot and column stills back in 2013.
Then, the rum was treated to a three part maturation - initially being aged for a year in Bourbon casks in the Caribbean, before being transported to France and aged for a further four years in Ferrand Cognac casks.
The rum was then transferred to a single barrel that previously held Arran single malt Scotch whisky for a finishing period of 5 years. In total, this rum has been aged for 10 years.
The final product is an extremely complex and flavoursome rum, with notes of vanilla, malt, sweet grapes, soft spices of cinnamon, nutmeg, ginger and cloves, treacle, caramel, oak, coconut, almonds, baked apples, sea salt, a whiff of smoke and mango.
Bottled at 51.2% ABV, this is a rum full of character.
