Another very interesting rum bottling from Plantation Rum (now known as Planteray).

This bottling contains spirit distilled by the Rum Co of Fiji. Fiji tends to be a little overlooked in the rum production stakes, but the region is home to some very characterful spirit.

This rum is made with molasses fermented for no less than an entire week! Long fermentations like this are known to produce spirits of great complexity and flavour. The rum was distilled in a traditional pot still, which also adds to its character.

Following distillation, this spirit was matured initially for four years in Bourbon casks in Fiji, before being moved to France and being aged for a further 6 months in Ferrand Cognac casks.

Next, it was transferred for 1.5 years in a single Bourbon cask from cult Texan distillery, Ironroot Republic (specifically, a cask that previously held the distillery’s Promethean expression).

The end result is a luscious rum, offering flavours of vanilla, honey, ripe bananas, dates, candied apples, almond paste, sandalwood, oak, citrus rind, apricots, quince, buttered popcorn, soft baking spices, pecan pie, ginger, dark chocolate, some powerful esters and green pears.

An experimental offering but one that should appeal to the purists out there too. Bottled at 50.3% ABV, this is a well crafted, assertive spirit.
