Plantation Barbados 2011
70 cl, 51.1%

A beautifully presented rum from the highly regarded Plantation Range.

This rum was made with a base of molasses, which was fermented for 72 hours. Distilled at the West Indies Rum Distillery (also known as WIRD) , in column stills and the distillery’s famous Gregg’s Farm Pot Still, only 24 casks of this spirit were produced.

The spirit initially aged in American oak former Bourbon barrels for four and half years in Barbados. There’s an interesting quirk about maturation at WIRD – barrels are left in a part of the distillery known as “no man’s land”: a secret area known only to the master distiller and master blender. This “no man’s land” is away from any pathways in the distillery, and not easily found.

After this first maturation, the spirit was then aged for another 4.5 years in larger Ferrand Cognac casks, in the cellars of Maison Ferrand. The rum’s final age was 9 years.

The result is a ludicrously rich and delicious rum that offers notes of cinnamon, dried fruits, mango bark, prunes, citrus rind, dark chocolate, flowers, funky molasses, nutmeg, walnuts and toasted oak.

The rum is bottled at 51.1% ABV. It contains 306 grams of volatile substances per hectolitre of pure alcohol, of which 120 grams are esters.

A superb rum, that should be sipped and savoured slowly.
