A special grappa produced by Paolo Marolo and his team to celebrate the Marolo distillery’s 35th anniversary.

Marolo distillery is known for their attention to detail, and belief in the importance of terroir. This grappa is produced using pomace from just one vineyard, Bussia. The spirit is made with Nebbiolo grape pomace which has been used to make Barolo, a wine produced local to the distillery, in the Piedmont region of Northern Italy.

Marolo treat the pomace very carefully, distilling it gently in their special bain marie stills so as not to damage its delicate flavours. The spirit has been aged for 12 years in small acacia casks – rarely seen in other spirits, this does not impart an enormous amount of flavour, but does give the grappa a delicate waxy texture. The bottling is all the more special as the distillery apparently forgot they even had this grappa maturing!

This grappa delivers flavours of liquorice, balsamic, rich almond and tobacco, raisins, prunes, toffee, chocolate, vanilla, cedarwood, grapes, honey, some wood, and green grape vine.

Just 3,326 bottles were produced, each one accompanied by an intricately designed box.

A fitting tribute to this innovative distillery.
