The wintry edition in Glendalough’s excellent seasonal gin series.

The gin is produced using some botanicals foraged from the nearby County Wicklow mountains, these include bog myrtle, fennel, juniper and hawthorn. Some botanicals, such as cinnamon, come from further afield.

The final result is a gentle, complex and spicy gin, with powerful notes of liquorice, and green herbs.

Not as forthright as many modern gins, this is a subtle drinking experience that can be easily overwhelmed – it pairs well with soda water.

A small batch gin that includes foraging and distillation dates, and batch number, on the label. As it is difficult to forage during the colder months, this gin might not be available every year.
