From the Dictador distillery which is situated in the city of Cartagena de Indias City on the Caribbean coast of Colombia, comes this “XO Insolent” rum. Unlike the world of Cognac, the words “XO” doesn’t mean anything when it comes to rum. But since all Dictador’s rums are aged solera-style, the actual average age of any of their rums is unknown. The selection of casks involved in this expressions is rather interesting. It is comprised of rums aged primarily in ex-sherry and ex-port casks which are re-charred (to caramelize the sugars from the oak and previous contents) prior to being filled with rum. The final product shows clear signs of having matured in these casks, mainly by a deep, rich sweetness from the port as well as a wealth of dried fruits from the sherry perfectly complementing the unique flavours of Dictador’s distillate.
