A first for the former wool-mill distillery, an organic single malt! Here the Highland distillery have demonstrated their commitment to local organic produce, creating this marvelous whisky with soft water from the River Teith. The whisky has certification of organic authenticity from the organic foods federation. This is a limited release, batched once a year. A respectable maturation of 15 years illustrates that this is a long term plan coming to fruition for Deanston. This whisky was aged in virgin oak barrels. On the nose this is a malt-forward dram, with aromas of freshly baked bread, vanilla, bright oak, cut grass and toffee. The palate brings tinned peaches and pineapple, with a little ripe banana, vanilla and orchard fruits. Here the mouthfeel is oily and buttery. The finish is short, with a peppery spice, light oak and slight cigar smoke. This whisky is bottled at 46.3% ABV, and without chill filtration, giving the flavours a boost!
