The sister bottling to 2017’s Highland Park Dark. Whilst that bottling was inspired by the autumn and winter seasons on Orkney, this bottling looks at the warmer, brighter seasons of spring and summer.
The Dark was matured in sherry casks, which typically produces a darker coloured whisky with rich notes of dried fruits. For this dram, Highland Park swapped out the sherry casks for refill American oak, allowing for lighter, gentler flavours of orchard fruits, flowers and wood spice. The colour is also a lighter, more summery amber.
17 years in the cask has given the dram plenty of complexity, even if it is a lighter profile.
This bottling serves up notes of apple, pear, honeysuckle, clear honey, cinnamon, sultanas, thick vanilla, mango, wax, subtle peat smoke, orange peel and slight pine-needles.
This whisky is bottled at 52.9% ABV, and without colouring or chill filtration.
28,000 beautifully designed bottles were produced, each coming with their own wooden presentation box.
