A remarkable rum bottled by Demerara Distillers.
This rum is the product of possibly the most famous still in the industry: Diamond’s wooden double pot still. Named Port Mourant, after the estate that originally used it (which was founded in 1732), this still is one of the very last made of wood to be operational. The spirits produced by the still are prized by blenders and rum aficionados alike, as they have a unique depth of flavour and aromatic profile.
This particular rum is a 1997 edition, bottled in 2017, having been aged for 20 years in former Bourbon barrels. All maturation occurred in the heat and humidity Guyana, ensuring a spirit of great depth and complexity.
The bottling serves up notes of intense dark fruits, dark oak, vanilla, prunes, raisins, dates, star anise, dark chocolate and coffee, citrus peel, maple syrup, cinnamon, pencil shavings, blackberries, plums, peaches, banana bread and rich molasses.
Bottled at a generous 57.9% ABV, with is thick and heavy rum, without being overly aggressive.
A great chance to taste a single still spirit from one of the most highly esteemed stills in the industry.
