A terrific Vintage release from Highland distillery Dalmore.
This whisky was distilled in 2007 and bottled in 2017, having been aged initially in first fill former Bourbon American white oak casks. The spirit was then finished in Apostoles sherry butts from Gonzalez Byass bodega.
This sherry style sits between a Fino and an Oloroso, having been aged with oxygen, like the latter, but with the dryness of the former. After 30 years of maturation, the sherry has given a great character to the oak, which then imparts incredible flavour to the whisky.
Drinkers can expect a fully flavoured whisky, with creamy vanilla, sweetness and woodspice notes provided by the American oak, and denser, fruitier flavours of prunes, cherries and raisins, dark oak and coffee imparted by the sherry cask. Both elements of this whisky remain in perfect balance.
Unlike most Dalmore offerings, this is released at the higher proof of 46% ABV, giving these flavours a warmer, creamier feel.
