Another top notch offering from the fine folk at Signatory Vintage. This time round they’ve picked out a belting Caol Ila, which has been aged in a single refill sherry cask.
The spirit was distilled on 22 of September 2010, and bottled on the 21st of October 2020, after a full ten year maturation.
The result is a delectable bottling that combines the peatiness of Caol Ila’s spirit with the fruity spice of the sherry cask. Drinkers can expect notes of treacle tart, coastal peat, cooked apples, dark chocolate, figs, prunes, plums, flinty minerality, a little iodine, dry smoke and some soft wood ash.
Bottled at a cask strength of 59.5% ABV and without chill filtration or colouration, this is a bottling full in both flavour and body.
Just 599 bottles were produced.
