A rather fascinating bottling from Destilerías Sierra, a well-established family run distillery found in a large Hacienda in Guadalajara, the capital of Jalisco, Tequila’s spiritual home.

This Tequila is made with 100% agave blue weber agave gathered from the Jalisco headlands. So far, this has the making of a well made, if conventional Tequila – it is only after roasting the agave that the innovation begins. After being cooked, the agave is smoked using a unique “ahumado” (smoking) process with Mesquite wood.

The result is a crisp and clean Tequila that pairs the succulent, verdant flavours of agave with an exceptional, slightly fruity smoke. These central flavours are accompanied by further notes of chilli, coriander and smoked lime.

The profile sits somewhere between a classic Plata Tequila and a more smoky Mezcal (Tequila’s kindred spirit).

The bottling bears the symbol of the Mayan zodiac sign “IMIX-IMOX” – the crocodile, representing the edge and power of this spirit.
