A rum better known in its buccaneer pistol bottling, this retro-style square bottle brings a little more tradition to proceedings. Distilled by Licores Veracruz, this is an excellent Mexican rum produced in Cordoba, a city found in the nation’s south-central region. This is a richly flavoured dark rum with a slight smoky note and a touch of savoury earth. The rum is aged in a solera system, meaning that as each cask is tapped for bottling (typically drawing only a third at a time), the next oldest cask will be used to refill it. In turn, this cask will be refilled by the next oldest, and so on. The practice is more common to sherry and brandy production, but creates a spirit of excellent balance and consistency. The tropical warmth and humid conditions of the city (which is close to the Gulf of Mexico) is perfect for the maturation of spirit, ensuring a wonderful intensity of flavour. A truly terrific Mexican rum.
