Located in Kirkwall, the capital of the Orkney islands, the Highland Park distillery uses its own peat from the neighbouring hills of Hobbister Moor to dry the barley which is still malted on-site. Distilled on 21st May 1991, this sherry cask bottling shows us this legendary single malt in a particularly peaty light. In turn rooty, salty, earthy, medicinal and animal, the aromatic palette is a vibrant illustration of this. Just as memorable, the sherry cask’s influence is not to be outdone. Eloquently, it evokes a high-calibre sherry such as palo cortado.

Colour: mahogany with glints of old gold.

Profile: the heady initial nose sees a rooty, salty peat dominate. It then becomes more earthy and medicinal (camphor). Mowed to breathe, heady florals fill the air. The clear attack reveals notes of incredibly juicy melon, fig and strawberry. Increasingly floral, the end of the palate precedes a finish that sees peat just gain the upper hand with a note of camphor. The retronasal olfaction rules in the sherry’s favour.

The whisky was disgorged and bottled under my supervision in the Town of Pitlochry on 12th June 2018.
