A delectable XO Cognac from François Voyer domaine.

This Cognac is produced using Ugni Blanc grapes grown at the estate, entirely located with the premier cru of Grande Champagne. Voyer maintain several unusual practices that make their spirit unique. They change what yeast is used to fermented the wine dependant on the climatic conditions. They also distil the Cognac with the lees retained, and incredibly slowly in two traditional Charentaise alembics. Finally the cut is taken using only the distillers’ senses only, rather than computers or machines.

The spirit has been aged initially in virgin Limousin oak casks for the first three years of maturation, before being allowed to matured in refill Cognac casks. This bottling contains a blend of eaux-de-vie aged for between 20 to 30 years, resulting in a deeply complex and fully flavoured dram.

François Voyer XO Gold serves up notes of powerful woody vanilla, toasted nuts, tobacco, cedarwood, toffee, white grapes, peaches, milk chocolate, espresso old oak, and subtle dried fruits.
