A top-quality XO Cognac from Francois Voyer.
“1er Cru” refers to the premier cru of Grand Champagne, where Voyer maintains its small vineyards of 100% Ugni Blanc grapes. Voyer has been distilling their own crops since the late 19th century, which means they have one of the deepest and best kept reserves in the Cognac industry. Helpful, when you are putting together a bottling like this one, blended eau-de-vie aged for between 10 and 25 years, all of which have been aged in new Limousin oak barrels for the first three years. The spirit is then aged again in refill barrels for the remainder of its maturation.
Voyer distil their spirit in a distinctive manner. First, the grape must is fermented with different yeast strains depending on the climate. Then the wine is distilled in two traditional Charentaise alembics, on lees – a rare practice that produces a more flavoursome final product. Distillation is extremely slow, and the heart of the spirit is taken using the distillers’ sense of smell, rather than computers and machines.
The final product is a wonderfully intense and well balanced Cognac, that offers up notes of rancio, toffee, white peach, vanilla, quince, old oak, pressed flowers, yeasty bread, milk chocolate, slight coffee, tobacco leaf, peppery spice, cinnamon, nutmeg, sultanas and white grapes.
