Another fantastic spirit from the Zuidam distillery, this time a Dutch rum – a rarity indeed! This lovely spirit has been produced at Zuidam’s distillery in Baarle Nassau in the Netherlands. Zuidam have made their name by producing some fantastic quality whiskies, pushing the boundaries of European distilling. Yet their rums are almost unique in being produced in Europe. These rums are made using an extraordinarily long, low temperature fermentation of around two weeks, producing a delicious, thickly flavoured sugar beer. This is then distilled in pot stills, less efficient than column stills, but far better for producing a more flavoursome and heavier rum. The spirit is then aged for five years in rich, sweet Pedro Ximénez casks, that give the final product a decadent sweet and fruity note. The rum is then bottled in these charming, decanter style bottles. Overall, a tour-de-force of a rum from Zuidam, that proves itself to be more than just an experiment.
