The Toutain family have been distilling Calvados at their La Couterie domain for five generations, or since 1921.

The Toutains are traditional producers of Calvados, continuing to plant their trees in the traditional hautes-tiges, or “high stem”, method. They also season the oak of their barrels with cider, so that the apple flavour always remains paramount, and the wood does not overwhelm it.

The apples at Toutain are fermented for between six and eighteen months, developing a powerful fruity and apple-y flavour.

This particular bottling has been aged for 10 years and finished in a cask that formerly held Pineau des Charentes. The bottling offers flavours of rancio, vanilla, spice, intense red and green apple skin, slight apricot, grapes, baked apples, gentle oak, cinnamon, raisins, cider and toffee.

Bottled at a generous 44.9% ABV, this is a satisfying, warming Calvados.
