A Dominican Rum from Summum, who take their name from the Latin word meaning “absolute excellence.”
A fitting title for this rum, which follows century old formulas, and aims to capture the flavours of the rum used by Máximo Gómez during his toasts in the Cuban War of Independence (Gómez had been born in Dominica).
The rums have been produced by Juan Alberto Álvarez, a maestro of many years’ experience.
This rum has been finished in “Cream Sherry” casks. Despite the name, no cream is used in the production of this fortified wine, rather it is a combination of sweet and dry sherries, known for its thick, creamy mouthfeel.
This sherry is perfect for adding complexity and flavour to rum, as it is rich in both dry and sweet sherry notes.
The final product serves up classic rum flavours of burnt brown sugar, vanilla, tropical fruits, bright oak and dark toffee, alongside sherried flavours of dried fruit, sweet wine, butter, and white grapes.
A fantastic addition to the growing finished-rum market, this is a bold statement of intent from Summum.
