A 12 year old rum from the Dominican Republic. Summum takes its name from the Latin word for ultimate, end or zenith (it is from this word we take the term “sum”). Therefore, we can say that this is the ultimate Dominican rum! The name is certainly fitting, with this a superb rum, aged in a classic solera system. This system of maturation uses a continuous row of barrels, with spirit being drawn from the oldest cask, then being topped up with the next oldest, and so on. This means that each bottling contains some very old spirit alongside some younger liquid, creating a final product of excellent balance and depth.
On the nose this is a rich and dark rum, with notes of black tea, fruit cake, spice, burnt brown sugar, molasses, toffee and butterscotch. The palate is faithful to the nose, adding a woody, thick, mouthfeel, and floral flavours and touches of hot woodspice. The finish is short and sweet, with classic estery rum notes lingering. A lovely rum at a great price, bottled at a drinkable 38%.
