A meeting of two of the great spirits of the world, malt whisky and rum! Summum takes its name from the Latin phrase meaning zenith or ultimate, a fair representation of this lovely drop. This is a rum from the Dominican Republic, aged initially in a solera system. This system of maturation uses a continuous row of casks, with spirit being taken from the eldest cask, then being topped up with the next oldest, and so on. This technique ensures that each bottling contains some very old spirit alongside some younger distillate, creating a final rum of excellent balance and depth. This rum is then finished for a period in malt whisky cask, adding wonderful flavours of bready toffees.

On the nose this rum is dense and decadent, with espresso notes, accompanied by toffee, butterscotch and burnt sugar flavours. A little clear honey aromas emerge after a while. The palate is thick and rich, with malted milk, bright vanilla, dark brown sugar and molasses. The finish is long and chewy with some woodspice notes. This rum is bottled at 43% ABV, giving the flavours a real boost.
