An excellent little aperitif from liqueur masters Distilleries et Domaines de Provence.

The liqueur has been made with hand crushed Dauphiné green walnuts, which tradition holds must be gathered at just at the right time, before the shells harden – on St. Jean’s Day (24th June).

After harvest, the nuts are placed into an old fashioned hand driven crusher, and macerated in a mixture of wine and alcohol for between 6 and 12 days. This long maturation ensures that all the complex and aromatic flavours of the nuts are extracted. An additional small maceration of dry walnuts is also made, to add colour and flavour. Then, a maceration of spices – nutmeg, pepper, cloves and cinnamon – is made, which sits for 15 days. These macerations are added together and redistilled. The spirit is then mixed with wine, sugar and alcohol, and left for six months. The result is this remarkable liqueur.

Noix de la Saint Jean Apéritif serves up notes of intense walnut, spiced bread, dried fruit, sweet wine, verdant herbs, slight chocolate and pepper.

Particularly recommended for serving with a post dinner cheese course.
