A well-made, sustainably produced Mezcal from the Amores company.
Amores provide a wealth of information for the discerning Mezcal fan. This bottling is made with Agave Cupreata (hence the name), known locally as “Maguey Papalote”. The plant has been allowed to grow for 13 years, achieving a full maturity. The spirit is produced in the Mazatlán region of Guerrero, a state in Mexico’s southwest.
The agave has been cooked in a traditional conical earth oven, with red oak used as fuel. It is then shredded mechanically and fermented in white pine vats. The spirit is double distilled, and the whole process is overseen by Maestro Mezcalero (Mezcal Master) Don Faustino Robledo.
The final result is a charcterful, slightly vegetal with notes of roasted seeds, lime rind, fresh coriander, flowers, crisp bell peppers, cracked black pepper, leather and bitter cocoa. The finish is surprisingly long for an unaged spirit.
For every agave that Amores use, they plant another 10. This bottling has been small batch produced in lots of 1500 bottles.
