An absurdly good value rum from Foursquare Distillery’s Doorly’s brand. Using the cognac age category of XO, which stands for Extra Old, this is a blend of pot still and column still rums aged for a minimum of 6 years. After maturation in former bourbon casks, this rum has been finished in Oloroso sherry. Whilst the bourbon maturation adds an extra dimension of tropical fruits and vanilla to the sweet and estery rum, the Oloroso finish gives the spirit an unparalleled richness, with chewy dried fruit flavours. This is a fantastic Bajan rum, perfect to sip neat or over ice. Taking pride of place on Doorly’s XO is the Hyacinth Macaw, the largest flying parrot of all, and sadly endangered. A fitting tribute to a big-flavoured rum.
