This superb whisky from Compass Box was developed to celebrate the 25th Anniversary of Delilah’s, the famous Chicago whisky and punk bar. Delilah’s Manager, Mike Miller, a dedicated whisky fan, has made a habit of commissioning excellent whisky bottlings for various anniversaries of his bar (the FEW Spirits 23rd Anniversary bottling was another example).
Indeed, this Compass Box release is based around a previous bottling they had produced for Delilah’s back in 2013. This original bottling was a rich, supple, American oak matured offering, that has only improved with the extra 5 years in the cask. The initial blend makes up 29% of this bottling.
Compass Box supply a detailed recipe of the rest of the blend. American oak matured grain whisky from Cameronbridge makes up another 10.5%, adding creamy, cereal sweetness. Miltonduff malt whisky, aged in American oak, adds floral flavours and makes up the same quantity. Sherry matured malt whisky from a “Distillery Near Aberlour” provides 15%, and lends rich, fruity flavours. Teaninich malt whisky aged in a first fill sherry cask contributes 20% of the bottling, and provides richness and depth. Finally, malt whisky aged in a first fill sherry butt from the cult favourite Linkwood distillery brings a creamy, fruity spice.
The overall result is a whisky of astonishing variety and depth, with the sherried and American oak matured parts working in harmony to produce a well-balanced and delicious dram.
Bottled at 46% ABV, without chill filtration or colouration, this is a fitting tribute to the iconic bar.
