Cleveland Whiskey uses a unique aging system, which maverick distiller and company founder Tom Lix claims allows the distillery to age their spirit far faster than by conventional means. This “Pressure Aging” (a patented method of whiskey making) also allows the distillery to use wood types usually too porous for effective whisky making. This particular bottling uses Black Cherry wood to create a unique and previously un-encountered flavour. The different wood type brings a light flavour of dark fruit, tart cherry and sweetened baking spices. An extremely interesting whiskey, that offers something very different indeed!
