Named after the proof (80º in American proof, or 40% ABV) of the dram, the Eighty is a Bourbon whiskey created by maverick distiller, Tom Lix. Lix has perfected a technique patented as Pressure Aging, in which the whisky is aged quickly through compressing the barrels. This opens and closes the pores of the wood, making for greater spirit-oak contact, and forcing the oak staves to relinquish the “Devil”s Cut” – the portion of whiskey absorbed by the wood. In someways it is a little similar to wringing out a sponge. The whiskey is also aged in heavily charred barrels, to add an extra layer of flavour. This bourbon is intensely vanilla-rich, with a delicious sweetness. A bourbon that breaks the mould, but retains its superb flavour.
