A Brandy de Jerez produced by Sánchez Romate, a high quality sherry bodega.
This brandy has been aged in a solera system, in casks that previously held Pedro Ximénez, a sweet and syrupy style of sherry. The solera system, which sees the oldest barrel topped up with the next oldest barrel at bottling. This barrel is in turn topped up with the next oldest, and so on. The solera used for this brandy has an average age of 30 years.
The final result is a thickly flavoured spirit, packed with flavours of nutty dried fruits, spice, grapes, dark oak, with some notes of creamy overripe bananas, vanilla, dark toffee, crisp burnt sugar and sherry.
Complex, dark and compelling, this is a satisfying brandy.
