A remarkable, long aged vintage “Marc” or pomace brandy from the Languedoc-Roussillon region.
Better known for the vast quantities of wine the region produces, Languedoc-Roussillon AOC is also home to several spirits and liqueurs, including Fines des Languedoc and Marc du Languedoc, a kind of brandy made with the skins of grapes that are leftover after winemaking.
This spirit was distilled by François Cathala at the Domaine des Pouzets, found in Narbonne. François uses stills that are hundreds of years old to produce his products. Alongside Marc du Languedoc, he makes Fine Languedoc and pear brandy from his orchard and vineyards. Indeed, François only uses fruits he has grown to make his spirits.
This is a 1975 vintage that has aged for a considerable time in oak casks. The final product serves up notes of: chopped herbs, bitter chocolate, coffee, dark oak, vanilla, dried fruits, spice, toasted nuts, sandalwood, grapes, barrel char, gentian and toffee. The spirit pours a deep bronze colour.
Rustic and delicious, this is an extraordinary spirit of a rare quality. Serve after dinner, or was you would a Cognac or whisky.
