This addition to Signatory’s Un-Chillfiltered range was distilled way back in 1997, and aged for 20 years in two Hoghead casks (numbers 7228 and 7229).
Dailuaine takes its name from the Gaelic for ‘green valley’, and is pronounced ‘dal-yewan’. The distillery is found in the Speyside region, and is one of the lesser known work-horses for Diageo, with nearly all of the spirit going into the company’s many blenders. Dailuaine whisky possesses somewhat meaty character, ideal for longer and sherry-based maturations.
This offering has a superb balance between spirit and cask, showcasing Dailuaine’s Speyside style. The whisky possesses notes of almonds, crème brûlée, vanilla, heather honey, slightly meaty oak, orchard fruits, dark chocolate, and warming spice notes of cumin, cinnamon and clove.
Bottled at 46% ABV and without chill filtration or colouration, this craft presentation allows the whisky to shine.
