Cambus 25 Year Old 1991 (Cask #55893) - Signatory Cask Strength
70 cl, 50.3%

Signatory have an excellent eye, not only for malt whisky, but for grain whisky too, as this bottling shows.

A wonderfully well aged single grain dram from the now closed (in 1993) distillery. Most of the stock this distillery produced was used in blends, meaning that single grain bottlings like this are increasingly hard to find. The distillery is found just outside Stirling, near the banks of the river Forth, and is still used as a cooperage by Diageo.

Single grain whisky really is something special after long maturation, with it absorbing the full flavours of the cask. In this case, the spirit has been aged in a single refill butt for a quarter of a century.

The result is a dram packed with dense, oaky flavours of vanilla, honeycomb, warm cake, chocolate, espresso, vanilla custard, slight sweet wine and dried fruit, alongside a core of bright cereal.

Bottled at a powerful 50.3% ABV, and without chill filtration or artificial colouration, this is a rare chance to taste a single grain whisky at its most vibrant and natural.

Great value for money for a whisky of this prodigious age.
