A top notch single varietal mezcal from the impressive bottlers, Bozal.

Bozal take their name from the Spanish term meaning “wild”, a reflection of the fact that they choose to bottle mezcals produced with wild agave strains.

This bottling has been made with Tepeztate mezcal, a subspecies of the Marmorata family of agave. The plant is notable for its strange, sawtoothed leaf structure. It tends to grow on the side of rocky cliffs and steep hills. Before the end of its life, the agave will produce striking, beautiful quiotes (or stalks) which flower with rich yellow petals. Typically, Tepeztate makes a spirit with a floral profile.

Bozal source their mezcal from producers who make spirit in the traditional fashion: using earthen pits to cook the piña and crushing the plants with stone wheels drawn by horses or donkeys. Fermentation occurs in the open air, using natural yeast, and distillation is performed in copper pot stills. This bottling was produced in Santa Ana del Rio, in the state of Oaxaca. It is a Joven, or unaged spirit.

The final product delivers notes of grapefruit, orange blossom, piney agave, ground white pepper, some chilli spice, minerals and wet stone, some jalapeno and sea salt.

A striking, rather vegetal mezcal. Bozal present their spirits in ceramic to recall the terracotta cups sometimes used to drink mezcal in Mexico. This bottling is azul blue to signify the Tepeztate agave used to make it.
